Boost your morning with these Banana-Oat Pancakes: Recipe

Your morning is off to a good start. Your alarm went off on time, you didn't hit the snooze button, you're in a good mood and your outfit is hitting all the right notes. You're having a good hair day and the sun is out. You prepare your breakfast and as soon as you walk out the door, you feel tired. You had coffee, you slept 7 hours and you still wish you could boycott the day ahead. Where did your energy go?

 

Well, you likely threw it all out the window with that blueberry muffin or frozen waffles.

 

What you decide to put into your body in the morning has a huge impact on the way you will feel like throughout the day. It dictates your energy levels, your mood, your appetite, and whether you'll need 1 or 4 coffees that day. When our breakfast consists of sugar, preservatives, flour and saturated fats, our mind and body responds accordingly.

 

There's a different route. By enjoying a breakfast that promotes a good mood, prevents spikes in insulin levels and curbs cravings, our whole day runs smoother. We respond better to stress and are more likely to make it to our afternoon fitness class!

 

We created a perfect breakfast, with enough protein, carbohydrates and all the right vitamins and minerals to support you throughout your day. The best part is, it takes 5 minutes to prep.

 

Here are our favorite (better for you) morning pancakes.

 

Serves 1 - 2

 

Ingredients:

 

1 egg

1 banana

1/2 cup rolled oats

1/3 cup unsweetened almond milk

1 tbsp almond butter (optional)

1 tbsp chia seeds

1/2 teaspoon cinnamon

1/4 teaspoon pure vanilla extract

 

Garnish:

 

Shaved Coconut

Handful of Blueberries

Pure Maple Syrup (optional)

 

Preparation:

 

1. Combine Ingredients into Blender

2. Blend together for 3 seconds

3. Heat a large skillet over medium heat.

4. Coat with coconut oil

5. Pour 1/4 cupfuls of Banana-Oats mixture onto skillet and heat for 2 minutes

6. Using a thin metal spatula, flip pancakes until golden on both sides.

7. Serve and garnish with blueberries and shaved coconut on top.

8. Enjoy with organic pure maple syrup.
